Before presenting you the recipe of Rziza of my mother, allow me to share with you this tagine
of meat and cardoons, prepared in Morocco.
It is my mother who cleaned cardoons as you
are going to see in the video (Allah yehfedha).
Cardoon (kharchouf in Arabic) has the shape
of celery, but once cooked, it tastes like artichokes.
A tagine of Cardoon and meat which are cooked
with ginger, turmeric, salt, pepper and preserved
lemon to bring a slightly acid, peppered and very
delicious Moroccan dish.
