Krichlat of Achoura's recipe
is a request from a fan, I dedicate this recipe to her
 and I dedicate it to everyone who is far away from
Morocco and cannot buy these crunchy and delicious cookies
which are sold in every market in Morocco especially during Achoura.
I invite you to atch the video
Krichlat Achoura (6)
 I am just like you, in Morocco, I like buying these Krichlats
especially from Jemaa El fna (Marrakesh), they are
so good but because I am very far from Jemaa El fna and Marrakesh , I have to prepare them at home, this recipe is a lot better  than these Krichlats which are sold in the Market,
at least you know the ingredients and you can decide
the quantity of every ingredient, If you like the
flavor of sesame seeds, you can add more, etc .
Krichlat Achoura (3)
  It is very easy to work the dough with your hand,
you do not need a machine.
Krichlat Achoura (8)
 It is very important to indicate that the sesame seeds
are roasted, also fennel and  anise, which gives
a very good flavor to these delicious cookies.
Krichlat Achoura (5)
You decide the size of Krichlats that
you want to obtain, by cutting them small or big.
Krichlat Achoura (2)
 I don't wait for Achoura to prepare them,
I always have them present for snack.

Pic invitation 011-1

2010-05-17 duck stuffed with rice & almonds

This recipe is a request from my husband who loves Turkey. I was wondering how to stuff the Turkey? Do I use the normal stuffing with oranges and serve it at the end with orange sauce? or something else.

So I remembered watching a Moroccan show "Chhiwat bladi", the lady stuffed a turkey with a mixture of rice and almonds, I just loved it.

So I decided to stuff my Turkey with the same stuffing, it was delicious !

My husband said with the first bite that his mouth was dancing with

joy, I was very satisfied and happy to find a new stuffing for my poultry recipes .

  I invite you to watch the video at the end of the article

* 12 oz roasted, ground almonds

* 7 oz rice (half cooked)

* 2 sticks soft butter

* 1 tsp arabic gum

* 3.5 powdered sugar

* 1 tsp Ras el hanout (it's a Moroccan spice,

leave it out if you don't have)

* Turkey (5 pounds) or a Duck

* 2 tsp saffron (divided)

* water

* 1 onion

* salt, 1 tsp ginger, 1/2 tsp Ras el hanout

* 2 Tbs olive oil

* 2 Tbs vegetable oil

* 2 garlic cloves

Mix the ground almonds with rice, butter, arabic gum,

ras el hanout, powdered sugar.

Stuff the inside of the Turkey.

Also the  neck area

Sew well to prevent the mixture from spreading

into the sauce while cooking.

Mix 1 tsp of saffron with a little bit of water,

spread it all over the Turkey.

Put the onion in a pot on medium heat, add garlic,

salt, ginger, ras el hanout, stir, put the Turkey over

the mixture, drizzle olive oil and vegetable oil over.

Pour the rest of the saffron and water mixture.

Spread 1 tsp saffron over the Turkey.

Cover and let cook.

Serve with vegetables or french fries.

Smen is a kind of preserved aged butter used in Arab and

Maghreb cooking. It is described as the most popular

cooking butter in Morocco and the Middle East,

it's similar to Eastern Ghee,

it's left to ferment in a cool dry place.
With its deep, pungent aroma and distinctive flavor,

it enhances many of Morocco's savory dishes,

especially couscous and tagines.

Here are some of my recipes

that I prepared with Smen.

Moroccan soup called Harira

Beef tongue

Rfissa or Madhoussa

Couscous with vegetables

Chicken Moroccan style

Couscous teffaya

Now that you have an idea about Smen, take a look

at the video to see how to prepare it.

Moroccan spicy sauce is a hot sauce commonly used in Moroccan cuisine. It adds a kick to pasta, tagines, couscous or any dish that likes a bit of spice. Every family has their own recipe. Mine is very easy, it contains oil, vinegar, garlic and salt.

Chilli peppers from my own garden.

As requested , I am posting  the recipe  Rghayef

with almonds and honey for you , which was

presented by a guest at Choumicha's show.

I will post for you my personal recipe of Rghayef

in honey soon.

These rghayefs contain more ingredients than usual; almonds, anise, arabic gum, saffron, sesame seeds... almost the same ingredients to prepare Chebbakiya, that is why the flavor is similar to Chebbakiya.

  Tiramisu is a popular Italian cake, the ingredients

are: eggs, sugar, mascarpone, biscuits "Lady fingers",

Coffee, cocoa powder, they are separately prepared

and stacked in independent layers.

 I invite you to watch the video at the end of the article

The first time I have Tiramisu, it was

in Germany in an Italian restaurant.

 Usually, I am not a great fan of cakes but Tiramisu

makes an exception, it has a great coffee flavour,

 it leaves the mouth  dancing for joy.

  As you see in the pictures, I prepared a big

dish and small individual portions, just to show you that

you have many choices (as I do in most of my recipes).

It is a very simple recipe which you can prepare

at home by yourself without going to the restaurant

to taste this great famous Italian cake.

Once prepared,  keep tiramisu in the refrigerator

as much as you can before cutting it.This helps

to keep it firm which is important especially during cutting.

Many recipes for Tiramisu asks for mascarpone

cheese. It is not really necessary, you

can replace it by a cream cheese just like I did,

especially when mascarpone cheese is very

expensive (here in the USA that is the case).

 I do not really appreciate it,

I find that mascarpone cheese has

no flavor as compared to the cream cheese.

 Try my version

and give me your opinion.

Today I have the great pleasure to present you a cake

that I prepared a few days ago for my friend Leila's birthday.
I prepared two sponge cakes that I stuffed with cream

and walnuts. I covered the cake with a mixture of cream cheese.

Then I decorated the surface with walnuts and

the sides with crushed peanuts. I finished the decoration with

the chocolate.
The cake was delicious and easy to make.

I invite you to watch the steps.
