Making your own sun-dried tomatoes is very simple and certainly is much less expensive than purchasing them at the grocery store.
Many enjoy eating them as a snack or with pasta, you'll enjoy using sun-dried tomatoes with many other foods, including vegetables, meats, and breads.
I will use them in some of my next recipes, but before that let me show you how to make your sun dried tomatoes at home.
 




 

Simply slice tomatoes in half, place on a raised screen,leaving enough place between the pieces for the air to circulate. Lightly sprinkle with salt, pepper, oregano, basil, or other optional herbs, and place in the hot sun until dry. 
 


Depending on your weather conditions, this could take anywhere from four days to two weeks. You'll want to cover them with a cheesecloth, raised so it does not touch the tomatoes. You will also need to bring them in during the night.
You can bake them, place tomatoes in a single layer on a cookie sheet, and set in the oven at 400 F, turn them occasionally. In the oven about 400 F, they will need 6 hours to dry, don't forget to keep your eye on them.
Baking them faster and at higher temperature, will ruin the consistency and the flavor.

 

During the drying process, tomatoes will shrink to about 1/4 of their original size.
The end product must be perfectly dry but not crispy, with no inner moisture in order to avoid bacteria growth. 




Place dried tomatoes in a sealable food storage bag. Squeeze out air and seal.
Place bags in the freezer, they should keep for 6-12 months. 

 



You can also store sun dried tomatoes in olive oil, put the dried tomatoes in a clean jar, add olive oil, rosemary, garlic cloves, cover with lid.  


They can be stored at room temperature in a cool, dark place in the kitchen cabinets. They will keep well for about 1 year.
 


Make sure that those left in the jar are completely covered with oil. 



 

 

The flavor of sun-dried tomatoes is quite intense,

you only need to use a little bit. 


 

When the tomatoes are gone, you still can use the oil that they were in for many recipes that ask for olive oil, it will add a great flavor to any dish.
 

Making sun-dried tomatoes is very easy. The most difficult part is waiting for them to dry.

Hi , I want to share with you my kid's birthday cake, since their

birthdays were so close together, we decided to celebrate them

on the same day. Jenna-Aicha has her birthday on June 11 th,

Sascha-Idriss has his birthday on June 25 th, on that day we

were in Disney world, so we decided to celebrate it on June the 26 th.

Hi, here is a picture of the Cinderella castle at Disney's Magic Kingdom in Florida. My sister was visiting from Morocco and it was my sons birthday,so we decided to go there.




These three picture are of the Swiss family Robinson tree house.

We did attend one of the day parades, here are some pictures.

At night the Cinderella castle changes to many different and beautiful colors.


It was a really nice day, although very hot. At night we had planned to stay in order to watch the night parade and fireworks that is performed everyday. Unfortunately there was a thunderstorm that was so strong that they had to cancel both events.

As you all know, my sister came from Morocco to visit me here in the USA, she brought me a lot of presents from my beloved country that I would like to show you.
I thank her so much and I tell her : " I love you ".
First of all, let me begin with spices, Morocco is rich with spices.



Cardamom حبة الهيل او قعقلة : follows saffron and vanilla as the world’s most expensive spice, it has a pleasant flavor and aroma.
Cardamom coffee is a symbol of Arab hospitality. Cardamom seeds are either crushed coarsely or powdered finely before using. These seeds lose their flavor quickly when ground; and it is ideal to buy only whole pods and crush them just before using.

Arabic gumm or gum acacia المسكة الحرة : beside the flavor,

it has a nice parfum, used especially for cookies and coffee.



Moroccan spices called "leachoub"or "Ras el Hanout" :
Ras el Hanout is the mixture of spices used for couscous and also

 a large number of other dishes. Certain Ras el Hanout is elaborated combination of 37 spices, the others are less sophisticated. All contain nutmeg, ginger, lavender, cumin, hot pepper, white pepper, black pepper, macis, anise, cardamom, caraway, coriander powder and other spices in some proportion, some more, some less.

Lythracees "Henna" حنة

Henna is the Arabic name of the shrub Lawsonia Inermis. The leaves of this shrub are dried and pulverized to obtain the powder henna.
It is from these dried and pulverized leaves that we extract a red dye called henna.It exists in wet zones of North Africa and the South of Asia. This powder, very popular among the women of the Islamic countries, it is used in multiple manners, but especially for hair coloring, for temporary tattoos on the skin and for dying of finger nails and fingers, also for the occasion of weddings.



Salvadora persica called "Siwak" " السواك " is extracted from the arak tree.
The souak is a plant native of the Maghreb. The souak is recognized for its antiseptic, astringent and healing propreties. It makes teeth whiter , eliminates the impurities and cleanses the breath. It strengthens and also cleans up gums. Teeth are solid and more brilliant.

Moroccan Clay called "Ghassoul" good for hair and face, it absorbs all the impurities, tightens pores and satine the skin. Rhassoul washes, revitalizes and gives the volume to the hair.





The kohl is a black or grey powder. It was formerly used as eye drops. It is a true medicine against the conjunctivitis and it protects the eyes against the reverberation and cleanses the white of the eye, the lens. It is a real symbol of the oriental beauty.
It stored in a small bottle which has a small wooden stick that is dipped into the grey or black powder "Lmerwed", then we make slide this stick between both eyelids starting from the outside to the inside of the eye.




Red powder called " Leker el fassi العكر الفاسي " ( perfect for the face, it clarifies the skin ). 



Silver Jewelry ( I love to wear silver jewerly especially in summer time ).








My favorites presents are these Moroccan handmade ceramic colourfull plates.






Original traditional Moroccan dresses called " Kaftan قفطان " or " Badiya بدعيا " for my little daughter Jenna-Aicha, she is two years old.

Hello my friends,
I would like to announce that my blog will be taking a break for about

a month.
My older sister (who is like a mother to me), will be arriving Saturday, May 30th from Morocco (Inchaallah), she will stay the entire month

of June in the USA. I am very happy to have her with me, especially

that it will be the first time in 20 years that I'm not traveling in Morocco in the summer to see my family.
Anyone who lives far from their family knows exactly what I am talking about.
So I am going to stop posting my recipes until she leaves (in July),

and also because I want to take a break from blogging.
I promise you that I will return with new Moroccan and international recipes, I'll also come to visit you as usual in July and to leave you comments.
I will miss you !

the spices for a broth, the result was excellent, I hope that

A mother always suffers for her children even before their birth.

She has to visit the doctor regularly to make sure that the pregnancy has no complications. She has to pay attention at what she eats,

how she moves, her life depends on the baby that is in her womb .

During the delivery, she suffers emotionally and physically, she

finally finds when the baby has been delivered safely, but this relief does not last very long because as soon as the baby is born, she not only has to pay attention to her own health, but to the health of the baby as well, who needs her attention 24/7; is he hungry?

is he clean? is he tired? is he sick?...

 

She is the only one who remains awake all night long if he is sick, being afraid that his fever may rise. She takes care of him until he is healthy. She takes him to the doctor, so that he gets his shots,

to check his weight.... When he begins to go to the day-care center, she also suffers, because she sees him sad due to his separation

of her.... The mom always suffers, she wishes to see her children happy and healthy. She gives the love, tenderness and attention without ever asking for a reward. I believe that every job of the world has a rest except the fact of being a mother, she works 24 hours,

7 days a week without ever complaining.
I think for these reasons there is this day called "Mother's Day",

a better way to celebrate the Mother's Day, is to give a day off to your mom. Let her rest and relax while the rest of the family does the work. Spoil her, a breakfast of Mother's Day can consist of what your mom likes. It is a good opportunity to see that the love that she gives you day and night without any reward, is also mutual, that she is surrounded by a magnificent family and that her presence is always important in your life.
To all the mothers of the world, I say "Happy Mother's Day" and to mine I say "I love you Mom".
