In El Eid (Muslim Holiday), our custom consists that every family,

as far as its means allow, sacrifices a sheep. We prepare meals

with  this meat, Tagines , couscous, and grilled as well,

we leave part of  the meat to dry, that what we call "El Gedid".
The meat is marinaded in several spices and dried under the sun,

so that we can eat all year long.

 


INGREDIENTS:
- 3 pounds beef
- 4 Tbs salt
- 6 garlic cloves
- 3 Tbs coriander powder
- 1 Tbs cumin
- a pinch of saffron
- 1/2 tsp turmeric
- 1/2 cup olive oil
- 1/4 cup vinegar

     

STEPS :

so that the spices are absorbed into the meat

(this helps the meat  from rotting).
Let marinade for at least one hour, hang the meat on a thread,

let dry under the sun all day long, to bring inside for the evening,

then the next day, hang it again under the sun until it is well dried
and its color becomes dark.

To keep El Gedid all year long, honnestly, I have no idea,

because  I never prepare it myself, I asked my mother

who said to me this :
You should not put it in the freezer, it is simply necessary

to cover  it with a white cloth and to put it in a plastic bag,

keep it in a drawer,

to take it out every two months and sun dry it.

  Hi my friends, there are too many that are asking for
Eid Al Adha recipes, I will try to post 
these videos on priority.
As you probably noticed, I post
3-4 recipes each day (whenever it's possible).
 To update news, I got 87 recipes to repost so
far,  I still have 313 old recipes + new recipes ...hard work ).
 For those who are not aware and
who are always asking me what happened to my videos, I tell you they were hacked by a "Sick" person,
 he hacked my accounts and my youtube page.

This dish is very present for us Moroccan
during El Eid,the legs of sheep with a variety

  In Morocco, Snails are sold in markets and by street vendors in every city and town, one of my favorite places to see them is at Jemaa Lefna in Marrakech as you can see in my pictures.

I know that for some of you, this recipe seems a little
strange but I assure you that, for us Moroccans,
it is a "Moroccan"delicassy.
 
The recipe is prepared by my dear mother, for me personally, although I like eating snails, I have never had the opportunity
to prepare them, to tell the truth, I did not know how
to prepare them .

I know it seems rather a unusual dish, but it's something I know
from home. The ingredients are not as hard to find as you think,
I found the hooves in a local Arabic store.
If you don't like white beans, you can substitute them with
chickpeas and raisins like I did with my recipe of Sheep Legs.
