Tagine is a dish which combines oriental spices,

sweet and salty. The success of the dish depends

especially on how It's cooked :

it must be cooked slowly so that all

the ingredients mix together.

  Today's recipe is Tangia, it's a specialty dish from

Marrakesh (Morocco) where my sister Hayat lives.

She gave me this recipe which I really like.

I hope you like it too.
I dedicate this video to her,

she is a very kind person and

a good cook as well.


Tangia transforms simple food to something exotic.

The aroma that comes from this dish while cooking

will make you hungry even if you just ate.

The scent of the ground coriander, roasting lamb

(or beef) and preserved lemon gives the feeling

that you are sitting in the middle of Jammaa lefna

 (the famous town square of Marrakesh).

Tangia should not be confused with a tagine.

A tagine is also a slow-cooked stew and

the name is applied both to the stew and

to the shallow dish with its conical lid

 in which it is cooked.
  

A tangia is a dish traditionally cooked by men,

it is a specialty dish of Marrakesh. Traditionally

the man of the house will prepare the Tangia

in the morning, drop it off at the neighborhood

bathhouse on his way to work and pick it up

several hours later on his way home.

 


Tangia must be cooked in the ashes of the fires

that burn   underneath the city's

hammams (public bath).

Before presenting you the recipe, I want to tell you

      a secret, I am in love with Tagine, any kind , this Moroccan

 pot fascinates me that there is not a week that passes

 without preparing one.

When I travel in Morocco, I like making a small trip in the Moroccan

 cities, It's a great pleasure to stop between cities in order to savor

 these Tagines cooked in canounes, a bowl made out of clay,

 we put some charcoal inside and cook the tagine, well spiced,

 

      Today, I share with you a chicken Tagine with zucchinis.

        Unfortunately, I didn't find small zucchinis, so I had to be content

 with the zucchinis I found, but for me, they are too big for a Tagine.

Before presenting you the recipe of Rziza of my mother, allow me to share with you this tagine 

of meat and cardoons, prepared in Morocco.

 

It is my mother who cleaned cardoons as you

are going to see in the video (Allah yehfedha).

Cardoon (kharchouf in Arabic) has the shape

of celery, but once cooked, it tastes like artichokes.

A tagine of Cardoon and meat which are cooked

with ginger, turmeric, salt, pepper and preserved

lemon to bring a slightly acid, peppered and very

delicious Moroccan dish.

Tajine aux Fenouils et Petits Pois   
   
Here is a great Tajine of the season, with fresh
vegetables, I chose fennel and peas because
they are a good combination for a delicious tagine
with a sweet flavor.
  
You can add potatoes
if you wish (especially for your children ).

I was happy to find the fennel here in Florida,
because usually I never find it here.
It reminds me of  the tagine I was
used to eating in Morocco.

  I did not put too much spices, I only put 
 pepper, turmeric and ginger.

     Use a normal pot
if you do not have a tagine.
