I never get enough of Tagines, I prepare them almost all the time, I like the flavor and they are very easy to prepare.They are perfect for inventing new salty and sweet recipes.
   
If you do not own a Tagine, you can prepare
these tagine recipes in a normal pot, it will give
you a similar result.
     
The recipe I offer you today is a lamb tajine,
with artichokes, peas and fava beans.

This is a recipe tagine which was requested by one of my subscribers in You tube, he is a vegetarian, so no meat, a tagine of vegetables, any kind, if you do not like a vegetable, you can replace it with another one, swapping of ingredients, is one of the things I like in tagines.

INGREDIENTS :

 

 

*2 Tbs olive oil

*4 Carrots

*3 Round Zucchinis

*4 Zucchinis

*1 Cauliflour

*2 Onions

*3 Potatoes

*2 Tomatoes

*2 Green bell pepper  

*1 tsp Salt, 1/2 tsp Pepper, 1 tsp Paprika
*2 gr.c Parsley
*10 Green Olives

STEPS :

 

Cut the vegetables the same size, heat the olive oil, and add carrots.

 Add the two zucchinis, cauliflour and the chopped onions.

Potatoes, green bell peppers, and tomatoes cut in slices.

Add the spices, let cook 45 min without adding water, because

the vegetables will lose their water.

Add olives 10 min before turning of the heat, decorate with parsley, drizzle 2 Tbs olive oil (if desired).

Serve hot with homemade bread like this.

This here is one of the simplest types of tagines, it's a farmer
style tagine if you will, made with ground beef, tomatoes,
spices and eggs.

Tagine is a large basic part of the Moroccan food culture,
you can find almost everything possible in a tagine and
they are made many different ways.


The best way to eat a tagine is with homemade bread.
I have prepared a Moroccan semolina bread to accompany

I always receive questions concerning the Moroccan cooking potsTagines that I have, so I present them to you all at the same time, here is my collection of tagines, I am very attached to this object knowing that it is a part of my Moroccan culinary culture.

  I begin with this beautiful black tagine that
I bought here in the USA, (the rest of Tagines are bought

in Morocco), it is expensive because the bottom

of this cooking pot is a pan kind Tefal.

  I liked this Tagine

because it has the shape
of a hat, a little bit bizarre but beautiful.

  I bought this tagine during the last holidays
In Morocco, it is a bit expensive because it is the latest

model of tagines this summer, it is rectangle as you see,
the inside looks like a grill.They are sold in  super markets.

This one was my first one,
It is not expensive at all, my mother bought

it for me in the Souk of the medina.

That one too, it is just smaller than

 that the other one of the top

  This beautiful blue tagine is only for the presentation,

  It is not made for the cooking.

This is the best tagine regarding cooking, 

it never sticks, even if you forget it on the fire.

  This one is too small for cooking, I put butter in it.

This one is also small,

I use it for dates.

  My daughter Jenna Aicha is like me,

She likes Tagines, so that one is hers 

a present to her, by my mom.

This is a  plate for tangine  and I advise you

not to cook in a tagine without

this plate, you risk breaking them.

Tajine de Coing

 

 

Here is once again a recipe which was filmed in Morocco, it is a 

Tagine of Quinces and Honey prepared by my sister Hayat

(our chef of the house).
She cooked the beef with spices and the quinces with honey and cinnamon, which gave it a salty sweet flavor, which is one of my favorite.

 

Thank you Hayat for the unforgettable flavors which you share

with us each time we are in Morocco, thank you sister for

your big heart, your love and your generosity.

My husband was on vacation visting his sister, he brought me multiple things; walnuts, lemons, grenadines, pears and a big bouquet of Ratabagas.
( Regretably I was not able to travel with him because
of my leg).
As soon as I saw the Rutabagas, I thought of a good couscous and a delicious tagine that I used to eat in Morocco at  my mother's house.
 

I began with a tagine, I just added a few potatoes to give a well-balanced taste, knowing that the flavor of Rutabagas is a little bit bitter.

I love Tagines !

They remind me of Morocco, when we travel from

onecity to the next, we have breaks in cafes and restaurants

which are everywhere on the roads of Morocco, they offer all

kinds of Moroccan specialties : tagines, couscous, mechoui

( grilled meat), Moroccan tea with mint...

 

I present you one of several varieties of Moroccan

tagines today. A tagine of meat ( you can use beef, lamb,

or chicken ), prepared with squash called Slaoui.
